Now that version 2.1 of the iPhone/iPod touch has been released for the iPod Touch (so I expect it to be available for the iPhone very soon (?)) - at the very least there is a list of what has changed :

Genius playlist creation

Dramatically reduced time to backup to iTunes

Improved email reliability, notably fetching email from POP and Exchange accounts

Faster installation of 3rd party applications

Fixed bugs causing hangs and crashes if you have lots of 3rd party applications

Faster loading and searching of contacts

Other bug fixes [From iPod touch v2.1: Problems Syncing, Fix]

The 2 that I am looking forward to is the "email reliability" and "Fixed crashes" - both have bothered me for the last week or so.
